Firehouse Subs Meatball® Sub (Copycat Recipe)
The Firehouse Subs Meatball® Sub is a comfort food classic—juicy Italian-style meatballs simmered in zesty marinara, topped with melted provolone, and served on a warm sub roll. While Firehouse keeps their recipe secret, this copycat version captures the same bold flavors and gooey, cheesy texture at home.
Ingredients
For the Meatballs (makes 12–15):
- 1 lb ground beef (or ½ beef + ½ pork/Italian sausage for more flavor)
- 1 large egg
- ½ cup Italian breadcrumbs
- ¼ cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tbsp fresh parsley, chopped
- 1 tsp Italian seasoning (or mix of dried oregano, basil & thyme)
- ½ tsp salt
- ¼ tsp black pepper
For the Marinara Sauce:
- 1 (28 oz) can crushed tomatoes
- 2 tbsp olive oil
- 2 cloves garlic, minced
- ½ tsp crushed red pepper flakes (optional)
- ½ tsp dried oregano
- Salt and black pepper, to taste
For the Sandwich:
- 1 sub roll or hoagie roll
- 2–3 slices provolone cheese
- Pinch of Italian seasoning (optional, for garnish)
- Dill pickle spear (for serving on the side)
Instructions
- Make the Meatballs
- In a large bowl, mix ground meat, egg, breadcrumbs, Parmesan, garlic, parsley, seasoning, salt, and pepper until combined.
- Roll into golf-ball-sized meatballs (about 12–15).
- Cook the Meatballs
- Bake: Place on a lined baking sheet and bake at 400°F (200°C) for 15–20 minutes, until browned and cooked through.
- Pan-Fry: Brown in a skillet with olive oil, then reduce heat and cook 10–15 minutes, until done.
- Prepare the Sauce
- In a saucepan, heat olive oil over medium heat.
- Add garlic and red pepper flakes; cook 1 minute until fragrant.
- Stir in crushed tomatoes, oregano, salt, and pepper. Simmer 5 minutes.
- Simmer Together
- Add cooked meatballs to the sauce.
- Cover and simmer 15–20 minutes so the flavors meld. The longer, the better.
- Assemble the Sub
- Slice the roll lengthwise.
- Place 4–5 meatballs inside and spoon marinara generously over them.
- Add Cheese & Toast
- Lay provolone slices over the meatballs.
- Place the open sub on a baking sheet and broil 1–2 minutes until cheese melts and bubbles.
- Serve
- Remove from oven, sprinkle lightly with Italian seasoning if desired.
- Close the sub, cut in half, and serve hot with a dill pickle spear on the side.
🔥 Pro Tips for an Authentic Firehouse-Style Sub
- Use soft but sturdy rolls—Amoroso-style hoagie rolls are ideal.
- Wrap the finished sub in foil for 2–3 minutes to let the steam soften the bread, mimicking the Firehouse Subs “steamed” effect.
- Add extra Parmesan or crushed red pepper on top for more flavor.
